When I "text" to another iPhone user with the messages it generally goes as an iMessage. This is not a text although most people can't actually tell the difference. But since it's not a text, it doesn't show up in the usage.
Same thing if I "call" someone with Skype, Facetime, or any of a bunch of different ways, they don't show up as "calls" either.
